Icelandic Flake is a superbly crunchy, mineral-fresh sea salt produced using only energy from geothermal hot springs in the northwest of Iceland just south of the Arctic Circle, making it perhaps the world’s only 100% geothermal energy artisan salt, and one of the best flake salt available anywhere to boot. It is the flake salt of choice for consumers looking for excellent salt made in an environmentally sustainable way.
The massive Eurasian and North American plates are slowly pulling apart in the middle of the Atlantic Ocean. Lava and fire pour forth to fill the abandoned space, forming the 40,000km long mid-Atlantic ridge. Iceland sits as a peak on this ridge. Geothermal energy, harnessed from heated water, is everywhere and a critical part of life on the island. Geothermal energy is harnessed to produce over a quarter of the island’s electricity and heat about 85% of its buildings.
It's also used to make salt. Geothermal energy is the only energy used to make Icelandic flake. Seawater is drawn from the nearby ocean and heated with geyser water flowing from the earth at 206°F in large pans. Once the brine has reached a salinity level of 17-20%, it is moved into smaller pans and heated until salt is born.
